Food & Beverage Exhibition Stands
Food fair stands where tasting actually happens — cold chain unbroken, surfaces that pass hygiene inspection first time.
At a food fair the stand is where the product gets tasted; everything else is infrastructure for that one act. Which means a single design has to solve four things at once: a cold chain that never breaks from the moment samples enter the hall, extraction and ducting approval if anything is cooked hot, seamless food-safe surfaces that wipe down, and a tasting counter that flows instead of forming a queue. Skip these at design stage and on show morning the fridge ends up in the aisle and the tasting gets shelved.
On Anadolu Gıda's stand at Gulfood Dubai we fitted a full tasting kitchen and the cold chain into 72 m²: display fridges and back kitchen sat on one technical run, leaving nothing but product and counter on the visitor side. The stand does not fly home each year — it is stored in Dubai and has been rebuilt for three consecutive editions.
The tasting counter is the stand
Layout on a food stand answers one question: where will the visitor taste the product? Push the counter into a corner or against the back wall and you don't pull people in — you push the queue into the aisle. The counter belongs angled to the frontage, not parallel to it, so whoever is tasting looks into the stand and whoever is waiting doesn't block traffic.
Back-of-house should be invisible but never far. On the Anadolu Gıda project the prep area sits directly behind the counter on a twin-door run: staff reach product in two steps and visitors never see the sink or the crates. That separation is standard in our custom stand work.
Cold chain and extraction are settled before the drawing
Two technical items have to be resolved before design starts. The first is cold chain: what temperature the samples enter the hall at, where they sit overnight, and where the fridges dump their heat. A display fridge boxed into joinery without 10–15 cm of ventilation behind it will not hold its own temperature.
The second is extraction. Most venues allow hot cooking only on approved, hooded runs, and that permission reaches the organiser 4–6 weeks before the fair. Share your menu at quotation stage — whether you are cooking, reheating or serving cold decides the entire technical layout.
Budget, and building the same stand twice
On food stands the budget is driven by technical density, not floor area. Modular runs €150–280 per m², maxima systems €180–320, bespoke joinery €350–700 — with kitchen, refrigeration and plumbing sitting on top as their own line. The same build in Western Europe costs €500–1,500 per m².
At overseas fairs the real saving is not shipping the stand home. The Anadolu Gıda stand is stored in Dubai and rebuilt with fresh graphics each edition. By the third year the running total sat well below a stand rebuilt from scratch annually.

Can I cook hot food on the stand?
